I cooked these in my air fryer, but you bake/broil them instead.

Slice yukon gold or finerling potatoes in 1/4 inch slices. Place in saucepan and cover with vinegar. boil for about 10 minutes until start to get soft. Preheat oven to 400 degrees or place in air fryer. Toss with a little bit of olive oil and toss with salt. Bake in the air fryer at 370 for about 15 minutes (tossing occasionally); or bake in over for about 15 min, flip and then bake about 10 min more. For crispier potatoes, broil for a few minutes.

231. black bean quinoa patties.

I kept seeing these all over pinterest and they looked so so good, so I thought I would give it a go. They didnt look like they do in the photo on the original post; I ate them topped with salsa, avocado and tomatoes and scooped it up with those tortilla chips it was pretty good. I think its all about how you doctor it up. These have a heavy black bean taste – and are kind of mooshy on the inside….So the texture of the tortilla chips definitely helped.

94. cashew and red lentil burgers


Another recipe from Color me vegan. These looked easy, and I had all the ingredients on hand. And nothing beats a homeade veggie burger!
I threw in about 1/2 a cup of quinoa with the lentils, for added nutrition.

These were delicious! The sweetness of the curry compliments everything so well. I will be making these again, for sure! Actually thinking of making a bunch and freezing them to have on hand.

2 cups water
1 cup diced carrots
1/2 cup red lentils
quiona (optional)
1/2 tspn salt
1 cup raw cashews
1 medium onion, chopped
2 cloves garlic, minced
1 T curry powder
1 cup panko bread crumbs

Combine water, carrots, lentils and salt to a saucepan. Heres where i threw in a handful or so of quinoa as well. Bring a to a boil. Redcue the heat to low and cover and simmer until lentils are tender, 12-14 minutes. Transfer to a bowl and let cool.

Toast cashews. heat 1 T oil and saute oinons until soft, about 7 minutes. Add garlic and curry powder and cook, for one minute.

I put the cashews in my vitamix and got them all ground up. Then I added the lentil and onion mixture, along with the breadcrumbs and mixed it up until smooth.

Form into patties and cook on oiled grill pan.

64. sweet potato veggie burgers.

So since I ate my way through NYC this weekend, I wanted to cook something healthy for dinner. I also wasn’t in the mood to grocery shop extensively, since I had been gone all weekend, so I decided to make these veggie burgers that have been all over pinterest the past few weeks.

I used this recipe as my base, but modified it a bit. I added quinoa and only used one can of beans because one can seemed like plenty. They are moosh-ier than your average veggie burger, but it didn’t bother us. I topped it with avocado, spinach and barbeque sauce. They make alot too. I think we ended up with about 8 large patties.

Sweet Potato Veggie Burgers
makes 7-8 large patties

1 can cannellini white beans, drained
2 sweet potatoes, baked/peeled/mashed (about 2 cups)
3/4 cup cooked quiona
2 tsph tahini
2 tsp agave
1 1/2 tspn cajun seasoning
1/4 cup wheat flour
2 T nutritonal yeast
1/2 cup to 3/4 cup panko crumbs

1. Bake sweet potato. Peel, place in large mixing bowl.
2. Add drained beans to mixing bowl. Mash beans and potato and quinoa together.
3. Mash in seasoning, flour and any additional seasoning. Your mixture will be quite soft and moist. But you should be able to form a patty. Add more flour or a scoop of breadcrumbs
4. Heat some oil in a pan over high heat.
5. Form a patty from mixture and coat in Panko crumbs. Drop the patty in the pan. Cook until browned on both sides.
