Today I made time to do something new with my little guy. I took him to lamb’s farm. We had never been, and now that we live in the north burbs – it wasn’t all that far away from us. We spent the afternoon chasing chickens, cuddling goats, riding the carasouel and playing mini golf. The weather couldn’t have been beat either! Good day for sure.

Another take on the garden stone. After seeing my other one, my mother in law requested one with milo’s handprint. I’m not totally sure I have the right cement for this, but I gave it a go. I used two plates and an ash tray from the thrift store. This time around I filled the cake pan with the cement and as it started to dry I started to shove the pieces in the cement. It was fast drying cement, so this wasn’t the easiest thing to accomplish, but I kind of like the way it ended up…
This time I got it right. Vegan chocolate banana ice cream. Yum.
The recipe is from vegan scoop. I just combined the banana recipe and the chocolate recipe. Cant wait to eat this in a bowl with some peanut butter too! Tonight we opted for cones. Great summer treat for sure.
I saw a recipe for these harvest muffins and thought they would be a good nutritious treat. I took a stab at veganizing them, and they turned out pretty good. Muffins are kind of tricky – they never taste like they do in the bakeries – but i usually opt for something more nutritious anyway. These could probably be a tad sweeter, but overall they turned out alot better than expected. They have no added fat really, are packed with vegetables and fruit and have minimal sugar….Milo ate them too, and even noticed the carrots, so I guess thats a win!
1 cup whole wheat pastry flour
4 1/2 tspn egg replacer powder, mixed with 6 T warm water
2 T plain soy yogurt
- Preheat oven to 400F.
- In a large bowl, mix together flours, baking soda, baking powder, pumpkin pie spice and salt.
- In a smaller bowl whisk the egg replacer, sugar, almond milk, and yogurt, then fold in the zucchini, apple and carrot.
- Add the wet mixture to the dry.
- Add the flax seeds mixture together till combined. Don’t overmix.
- Divide the mixture evenly in a 12 count muffin tin.
- Bake for 12-14 minutes, or until toothpick comes out clean.
- Cool and enjoy.
- To freeze, place each muffin in an individual sandwich bag and place in the freezer – an easy grab and go breakfast!
This weekend I got two of these frames for 25 cents at a garage sale. I thought they would be perfect to take home and spraypaint and make a silhouette of milo. The original frames were brown; I spraypainted this one grey, added some colored paper behind it. I took a photo of milo, printed it out to size and traced it on top of this dark grey cardstock I had. I glued the face to the colored paper and then put a thin coat of mod podge over it. Now I need to figure out where to hang this….
(P.S. this photo shows our GROSS bedroom paint colors. light pink with a purpley-grey trim. Hoping to get the bedroom painted soon, then I’ll unveil it!)
