Do I need to mention this had me at sprinkles?! Super fun to make and serve up – anything topped with sprinkles is a winner in my book.  Especially when a birthday in invovled.

  • 2 cups all-purpose flour
  • 2 t baking powder
  • 1 t baking soda
  • 3 big pinches of kosher salt
  • 1/2 cup brown sugar
  • 2/3 cup maple syrup
  • 4 t pure vanilla extract
  • 1/2 cup olive oil
  • 1/3 cup peanut butter
  • 1/2 cup chocolate chips
  • 1/2 cup rolled oats
  • to top: SPRINKLES!

Directions:

  1. Preheat your oven to 350F. Line a baking sheet with parchment paper. Whisk together the flour, baking powder, soda, salt, and sugar. In a 2-cup measuring cup whisk together the maple syrup, vanilla, almond butter and olive oil. Add to the dry ingredients and beat until almost together. Add chocolate chips and oatmeal. Mix until combined.
  2. Scoop the dough into the pan and place on the prepared baking sheet. Flatten slightly and sprinkle with lots of sprinkles. Bake for 20-25 minutes or until set.

Nothing says happy birthday like funfetti cupcakes, am I right?? Tomorrow is my birthday, so I thought this recipe was fitting. I actually made these for my co workers birthday last week and they were a hit.
These just might be the most perfect vegan vanilla cake! you can find the recipe over here, these did NOT dissapoint!

I topped mine with vegan cream cheese frosting because its the best!
1/4 cup vegan creme cheese
1/4 cup earth balance
2 cups powdered sugar
1/2 tpsn vanilla extract

Beat all ingredients with a mixer for a few minutes until light and fluffy.

Chocolate donuts covered in sprinkles? sign me up!

Ok, so maybe these arent traditional donuts, and maybe they arent the most sweetest things on the planet – however, they are taste like little bites of cake – and they are covered in sprinkles, so you cant go wrong in my book! I always want donuts, but rarely have them, and i ALWAYS want cake, but dont make it often, because i will eat ALOT of it. This seems to be an easy way to satisfy that cake craving – it makes 24, and they are small little bites.

I found the recipe here, and veganized it.

For the donuts:
  • 1 ¼ cups all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup almond milk
  • ½ cup packed light brown sugar
  • 1 flax egg
  • 4 tablespoons earth balance, melted and cooled slightly
  • 2 tablespoons brewed coffee, cooled slightly
  • 1 teaspoon vanilla extract
For the glaze:
  • 2 cups confectioners’ sugar
  • 2 teaspoons vanilla extract
  • pinch of salt
  • 4 to 5 tablespoons almond milk
  • sprinkles, for garnish
Instructions
  1. To make the donuts – preheat the oven to 325 degrees. Generously spray a mini muffin pan with nonstick cooking spray and set aside.
  2. In a large bowl, whisk together the flour, cocoa powder, baking soda and salt until there are no lumps. In a small bowl or liquid measuring cup, whisk together the almond milk, sugar, flax egg, melted earth balance, coffee and vanilla. Add the wet ingredients to the bowl with the dry and mix until combined. Fill each mini muffin tin about ¾ of the way full (about a heaping tablespoon in each). Bake for 10 to 12 minutes, or until a toothpick inserted into the middle comes out clean. Allow the donut holes to cool for 3 to 5 minutes in the pan then remove to a wire rack. Let the donuts cool for another 10 minutes, then proceed with the glaze.
  3. To make the glaze – Add the confectioners’ sugar, vanilla and salt to a small bowl. Slowly whisk in the almond milk, one tablespoon at a time, until it reaches your desired consistency.
  4. Lay a piece of wax or parchment paper underneath your wire rack (so the glaze doesn’t drip on your counter). Add the sprinkles to a shallow bowl. Working one at a time, roll each donut hole in the glaze. Shake off the excess then roll in the sprinkles. Shake off the excess once again and then place on the wire rack to set.

oh these cookies. they are the death of me. they have peanut butter, chocolate chips, and sprinkles. LOTS OF SPRINKLES. Oh, and they are ooey-gooey and chewy. I couldn’t get enough of them. Original recipe found here.

  • ½ cup Earth Balance
  • ½ cup peanut butter
  • 1½ cup sugar
  • 2 tablespoons ground flax seeds
  • 2 tablespoons corn starch
  • ½ cup non-dairy milk (soy, almond, etc)
  • 1 teaspoon apple cider vinegar
  • 1 teaspoons vanilla extract
  • 2½ cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup chocolate chips
  • 1 cup (plus extra) sprinkles

Instructions

  1. Preheat your oven to 350 degrees.
  2. Place the earth balance, peanut butter and sugar in a mixing bowl and using your electric mixer, mix on medium high speed until light and fluffy, about one minute.
  3. Push the earth balance mixture to one side and in the other side of the bowl combine the ground flax seeds, corn starch, non-dairy milk, apple cider vinegar, vanilla, and almond extract. Stir to combine. Now, using the mixer, slowly incorporate the flax seed mixture in with the earth balance mixture. Continue mixing until light and fluffy again.
  4. In a separate bowl combine the flour, baking soda, and baking powder. Stir to combine. Pour the flour mixture over the earth balance mixture and use your mixer to combine. Add the chocolate chips and sprinkles and mix some more until the sprinkles are incorporated throughout the dough.
  5. Drop cookie dough roughly 1½ inches apart on your cookie sheet. Pour some additional sprinkles on a plate and grabbing one ball of cookie dough at a time, dab the top of the cookie dough ball into the plate of sprinkles to give the top a coating of sprinkles. Place it back on the cookie pan and gently smash the top of the cookie to ensure that the new sprinkles are embedded in the cookie dough ball. Repeat with each cookie.
  6. Place the prepared pan of cookie dough balls in the oven and bake for 8-9 minutes. These cookies are best when they’re slightly undercooked so be careful not to over bake.
  7. Remove the pan from the oven and allow the cookies to cool slightly before placing on a wire rack to cool completely.

One night while scrolling through pinterest, milo saw these and said “back up! I want to see those…..OOOOOOH. Can we make those?!!”

He was having his friend sleepover for the first time this weekend, so I thought this would be the perfect occasion to bust out the donut pan and give these a go.

I have been on the fence about these donut-pan baked donuts. They always taste ok to me, but not like a donut. These are the closest to real donuts I have ever had. They are rich and chocolatey and the glaze sets very nicely.

These were gone in no time!

This recipe made 10 full size donuts.

1 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup light brown sugar, packed
1/2 cup almond milk, mixed with 1/2 tspn apple cider vinegar
1 1/2 tspn egg replacer powder mixed with 3 T water
4 tablespoons earth balance, melted
1 teaspoon pure vanilla extract

For the Chocolate Glaze:
1 1/4 cup powdered sugar
3 tablespoons unsweetened cocoa powder
3 to 4 tablespoons almond milk
2 teaspoons pure vanilla extract

Preheat oven to 325  degrees F.  Spray a doughnut baking pan with nonstick cooking spray and set aside.

In a medium bowl, whisk together flour, cocoa powder, baking soda, salt, and brown sugar.

In a small bowl, whisk together almond milk with the vinegar mixed in, egg replacer, melted earth balance, and vanilla extract until thoroughly combined.

Pour the wet ingredients into the dry ingredients and fold together until all of the ingredients are well combined.  Use a small spoon to portion batter into the prepared doughnut baking pan.  Each doughnut mold should be about two-thirds full.  Bake doughnuts for 11 to 13 minutes or until a skewer inserted into one of the doughnuts comes out clean.  Remove from the oven.  Allow to rest for five minutes before inverting doughnuts onto a wire rack to cool completely.  Allow doughnuts to cool completely before glazing.

To make the glaze, in a medium bowl whisk together powdered sugar, and cocoa powder.  Add 2 tablespoons of almond milk and all of the vanilla extract.  Whisk to combine.  Mixture may be thick.  Add milk, a tablespoon at a time, until the glaze is thick but still pourable.

Dip each doughnut into the chocolate glaze.  Shake off some of the excess glaze.  Return to the wire rack and sprinkle with color jimmies.   Allow to rest a few moments for the frosting to harden slightly.

Its no secret that I love sprinkles on my cupcakes! So its an added bonus when there are sprinkles IN my cupcakes!

For these cupcakes, you can use your favorite vanilla cake recipe. Mine comes from Vegan cupcakes take over the world.
Right before you are done mixing, dump in a bunch of sprinkles to the batter. Bake as usual.

While the cupcakes are baking, and then cooling – you can make your frosting. This strawberry frosting is so good! The strawberries give it a hint of berry flavor, and a lovely light pink color. Of course when you are done, you want to top with MORE SPRINKLES!

I found the recipe here for the frosting.  It’s Sprinkle’s cupcakes recipe. Now only if I could learn to make my frosting look like theirs….

  • 1/2 cup whole frozen strawberries, thawed
  • 1 cup (2 sticks) earth balance, firm and slightly cold
  • Pinch of coarse salt
  • 3 1/2 cups confectioners’ sugar, sifted
  • 1/2 teaspoon pure vanilla extractPlace strawberries in the bowl of a small food processor; process until pureed. In the bowl of an electric mixer fitted with the paddle attachment, beat together butter and salt on medium speed until light and fluffy. Reduce mixer speed and slowly add confectioners’ sugar; beat until well combined. Add vanilla and 3 tablespoons strawberry puree (save any remaining strawberry puree for another use); mix until just blended. Do not overmix or frosting will incorporate too much air. Frosting consistency should be dense and creamy, like ice cream.

After dinner tonight, we decided we needed something sweet. Dj suggested a chocolate chip skillet cookie, but since it was just three of us, I thought that would do TOO much damage (doesn’t mean it wont be coming in the near future…), So i opted for this funfetti cookie for one – in our case…three.

It totally satisfied the sugar craving, and we were able to whip it up in no time. We each got a little taste, and I’m not left with two dozen cookies calling my name all weekend….Probably not the healthiest habit to get into, but it sure was tasty!

Ingredients
  • 2 Tbsp earth balance
  • 4 Tbsp sugar
  • 1 1/2 tspn egg replacer, plus 2 T warm water, combined
  • 1/2 tsp vanilla extract
  • 6 Tbsp all-purpose flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 2 Tbsp sprinkles
Instructions
  1. Preheat oven to 350 degrees. Spray cookie sheet with nonstick spray.
  2. In a medium-sized mixing bowl, stir the earth balance and sugar together until creamed. Mix in the egg replacer and vanilla.
  3. Stir in flour, baking soda, salt, and sprinkles until just combined. Do NOT overmix.
  4. Place the dough in the center of the prepared cookie sheet into a big ball. flatten a little bit –  Bake for 14-16 minutes until the edges are browned. The center may appear undone but that’s what you want. It will firm up. Allow to cool completely ON the baking sheet. Enjoy!

284. chocolate mini donuts.

The Pumpkin donuts I made last week were such a hit with Milo, that I decided to give it another go. This time making his favorite: chocolate WITH sprinkles. These are so suprisingly easy to make! After some searching on the internet for some ideas, I gave this recipe a go.

 

1 3/4 cups All-Purpose Flour
1/4 cup Cocoa Powder
1/2 tsp Baking Soda
1/2 tsp Salt
1/2 cup Brown Sugar
3/4 cup almond milk
3/4 cup Applesuce
1/4 cup Canola Oil

Preheat oven to 350°F and lightly grease donut pans.

Stir together the flour, cocoa, baking soda, and salt. Set aside.

Blend together the sugar, milk, applesauce, and oil, until thoroughly combined. Add to the dry ingredients and blend until just combined.

Fill each donut well 3/4 full. Bake for 9 minutes, until donuts spring back when lightly pressed. Allow to cool in pan for 5 minutes before transferring to rack.

When completely cool, dip tops of donuts into chocolate sauce (recipe below) and place in refrigerator to set.

Chocolate Sauce
6 tbsp Non-Dairy Milk
2/3 cup Semisweet Chocolate Chips

Warm milk, over medium heat, until it’s just about to simmer.

Remove from heat and add chocolate chips. Stir until chocolate has melted and everything is thoroughly combined.

Dip donuts.

Its was my dear friend, carrie’s birthday earlier this week and I have plans to see her tonight, and nobody loves margaritas more than she does!
I made her these once years ago, and she always raves about them, so I thought it would be fun to surprise her with a birthday treat!
You can find the recipe in Vegan Cupcakes take over the world. They are definitely a crowd pleaser! They are a light cake with hints of lime and tequila. It has a thin coat of lime icing with the edges dipped in sprinkles to look like margarita salt. Yum!

I needed to bake cookies to bring to work for a little celebration we are having, so I made these sprinkle cookies. I had three kinds in mind, and let milo pick – and of course he picked these….They were really easy to make and came together in no time. They make pretty excellent ice cream sandwiches! They kind of taste like the refrigerated kind that you slice and bake…but they are homeade!

  • 8 ounces earth balance
  • 3/4 cup sugar
  • 3/4 cup light brown sugar
  • egg replacer equivalent of two eggs (i used egg replacer powder and water)
  • 1 teaspoon vanilla bean paste or extract
  • 2 and 1/2 cups AP flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup rainbow sprinkles

Instructions

  1. Cream earth balance and sugars till light and fluffy.
  2. Add egg replacer and vanilla.
  3. Mix in flour, salt, and baking soda.
  4. Mix in sprinkles.
  5. Portion dough into 2 ounces each.
  6. Bake at 325 degrees for 13-15 minutes rotating once halfway through.
