In honor of labor day, we had some friends over in the afternoon for lunch and I made these grilled tacos with avocado cream and cabbage slaw, and grilled corn. They were excellent! We love to bbq, but never really know what to grill other than veggie burgers or pizza. So this was great to add to the list. We made a little taco bar with all the ingredients and everyone mixed and matched to their liking. A fun way to say bid farwell to summer. Although, we may be making these again in our future!

I kept seeing these all over pinterest and they looked so so good, so I thought I would give it a go. They didnt look like they do in the photo on the original post; I ate them topped with salsa, avocado and tomatoes and scooped it up with those tortilla chips it was pretty good. I think its all about how you doctor it up. These have a heavy black bean taste – and are kind of mooshy on the inside….So the texture of the tortilla chips definitely helped.

I saw this idea on pinterest – only it involved cheese and chicken. Tonight I made my own version and it was DELICIOUS.
First, I made some pesto. I just kind of wing my pesto. I took a handful or so of basil leaves, a handful or so of baby spinach, about 3 Tablespoons pistachios (I didn’t have pine nuts), 2 cloves of garlic, 1/3 cup vegetable broth, 1 T olive oil, salt, pepper, 1 T of nutritional yeast and blended it up in the vitamix.
Then, I sauteed some uptons seitan in a pan.
I chopped up some baby tomatoes from my garden.
I took a large tortilla, smeared on the pesto, cooked seitan, tomatoes and added some mozerella daiya cheese. Cooked this in a pan, and ate it right up. Holy cats, was it good!
Combining two pretty amazing things – enchiladas and pizza!
Buy or make a pizza crust (this one is my favorite, go-to crust)
Top it with enchilada sauce, seitan, black beans, corn, green onions, green chilis and daiya cheese.
Bake and top with vegan sour cream, avocado and one of my guilty pleasures: taco bell packets.
Tonight I made another version of tortilla soup. Last time I used the crock pot; Tonight I used the vitamix!
Basically I threw 5 roma tomatoes, 2 cloves of garlic, half a green bell pepper, chunk of onion, a carrot, half an avocado, 1 tspn of taco seasoning, some black pepper, 1 soft corn tortilla, a vegetable bullion cube and 3 cups hot water into the vitamix. I blended it for about 6 minutes, until I saw steam coming from the top. Yes, my friends, the vitamix COOKS THE SOUP AS IT BLENDS IT.
(this would have been super yummy with a bunch of cilantro, but dj would have probably divorced me)
When it was about done, I threw in a cup of black beans, a cup of corn and some chorizo seitan and blended on low for a few seconds. We topped it with some crushed tortilla chips (donkey chips of course, they are the best!)
