We grew some kale in the garden and it did really well. So now i have lots of kale to work with. I whipped up some quick spaghetti one night and it was delicious. The leftovers were even better b/c it was so garlicky!

Dry spaghetti (about half the package)
2 tablespoons good extra virgin olive oil
8 sprigs lacinato kale – very finely chopped
Pinch red pepper flakes
Salt and freshly ground pepper
3-4 large garlic cloves, finely chopped
Juice of 1 lemon wedge
fresh basil
lemon garlic seasoning
2 tablespoons vegan Parmesan

Cook the pasta al dente according to package directions.

When the pasta is almost done, heat the oil over medium heat in a large skillet. Add the kale, red pepper flakes to taste, and season with salt and pepper. Cook and stir for 3 or 4 minutes, until the kale starts to get a bit crisp. Add the garlic and cook, stirring, for another minute. Add drained pasta, lemon juice, and vegan parm, and stir to combine.

CAULIFLOWERCHOWDER

Heres a recipe for this dreary, rainy day! It’s a creamy, garlick-y soup that was delicious and came together pretty easily. It makes great leftovers, because the garlic really sits in and comes to life.  If you have a vitamix this soup comes together in no time!

  • 1/4 cup raw cashews, soaked for at least 2 hours
  • 1 head cauliflower
  • 1 small potato
  • 1 garlic bulb
  • 2 tablespoons oil
  • ½ cup Sabra Roasted Garlic Hummus
  • ½ cup cooked quinoa
  • 2 cups vegetable broth
  • 2 cups water (+ more as needed)
  • 2 teaspoons miso paste
  • 2 teaspoons nutritional yeast (optional)
  • Salt + pepper to taste
  1. Preheat the oven to 425ºF. Chop cauliflower into florets, and peel and chop the potatoes. Arrange on a baking sheet and drizzle with about 1½ tablespoons of oil. Season with salt and pepper.
  2. Cut the top off the garlic bulb so that some of the cloves are slightly exposed. Drizzle with remaining oil and season with salt and pepper. Wrap bulb in tin foil and place on sheet with vegetables.
  3. Roast for 20 – 25 minutes until the cauliflower is starting to brown and the potatoes are soft (they don’t have to be totally soft because we’ll be blending them later). Check the garlic after 15 minutes to make sure it isn’t burning. Allow the veggies to cool slightly then add them to a vitamix or high powered blender. Squeeze/spoon the garlic out of skin and add it to the blender as well.
  4. Add the cashews, along with the hummus and quinoa to the vitamix. Pour in liquids, miso, nutritional yeast and additional salt and pepper, and blend on high until smooth and creamy. Taste and adjust seasonings (adding more garlic, salt, pepper, miso or other seasonings) as desired.
  5. Serve warm topped with some of the roasted garlic garnish from the hummus, some chopped parsley and a drizzle of olive oil.

PORTABELLABAGEL
Oh, this sandwich….never mind that your breath will smell like garlic for the evening – its totally worth it.

4 portobello mushrooms
4 seasame bagels
Tomatoes
Baby Spinach
1 avocado
1/4 cup balsamic vinegar
1 tablespoons olive oil
2 tablespoons Dijon mustard
1 teaspoon dried thyme
Salt and pepper

Uptons seitan bacon (or make your own tempeh bacon!)

Garlic Cream Sauce:
1/3 pack of mori-nu soft silken tofu
10 cloves garlic, peeled and gently crushed
1 bunch fresh flat-leaf parsley
1 tablespoons Dijon mustard
Juice of one lemon
Salt and pepper

For the mushrooms: In a large shallow container whisk together the vinegar, olive oil, mustard, thyme, parsley salt and pepper. Once combined, place the mushrooms in the container and turn a few times to get them coated nicely. Bake in the oven at 400 degrees for about 15 minutes or so.

For the garlic cream sauce: Add to a food processor or blender the tofu, garlic, lemon juice, mustard, parsley, salt and pepper.

Fry up your uptons bacon, or start making your tempeh bacon.

Toast your bagel, add mushroom and bacon – top with lots of garlic creme sauce, spinach, tomato, and avocado!

Its messy, but its super tasty! Enjoy!!
