While in japan, I recently discovered gobo. I guess here in the states it is also called Burdock. I found some at my asian grocery store – its sort of like a turnip.  Anyway, served up with some carrots and a light sauce its really delicous and really healthy –  filled with fiber!

2 T soy sauce
2 T mirin
2 T vegetarian dashi powder
water

Peel and slice your carrots and gobo at a 90 degree angle. Prep a wok with a little bit of oil and add gobo and carrots to pot. Stir fry around for about 5 minutes, then add soy sauce, mirin and vegetarian dashi.  Let cook for another 4-5 minutes, then add a little bit of water to the pan to get it to sizzle and cook up some of the sauce. Let cook for about 5 minutes more and serve.

These are a simple cookie to make for your dogs. My dogs sat patiently while I was making these, watching my every move – they were excited to get a homeade treat of their own.

This is a rare instance where I’m posting a non-vegan recipe. This recipe uses eggs and it acts as the binding in the cookie. I bet you could substitute an egg replacer like a flax egg, which would also give it some added nutrients!

1/2 cup carrot juice
1/2 cup unsweetened applesauce
2 large eggs
1-3 tablespoons natural creamy peanut butter (you decide depending on how your dog likes peanut butter)
2 cups all-purpose flour
2 T flax
1/2 cup coarsely ground cornmeal
1/2 cup rolled oats

Directions:

Preheat the oven to 400 degrees F, with a rack in the center of the oven.
Line a baking sheet with a piece of parchment paper and set aside.

Combine all ingredients in a large bowl and stir to combine and form a thick dough. Flour your surface well, and turn the dough out onto the board.

Sprinkle flour on top of the dough and onto a rolling pin, and roll the dough to approximately 1/4″-1/2″ thickness. Be sure to use plenty of flour, as this dough is very sticky!

When the dough is rolled out, dip a cookie cutter into flour and cut out the biscuits.

Transfer the cut out biscuits to the prepared sheet pan, leaving about 1/4″ of an inch between each treat. These don’t spread out, so you can fit upwards of 40 onto a baking sheet at a time.

Bake at 400 degrees F for 20 minutes, or until light golden brown.

Remove the baking sheet from the oven and allow the biscuits to cool completely.

Transfer the biscuits to an airtight container, where they will keep at room temperature for up to two weeks.

carrot muffins

CARROT
i was pretty skeptical when making these muffins because they called for ALOT Of carrots, were low in sugar and had alot of healthier type ingredients (spelt flour?!).  They are probably one of THE BEST muffins i have ever made. I will be making these again and also try experimenting with adding some other things (maybe zuchinni in the summer?!).


8 oz. carrots (chopped and peeled)
1 egg replacer
1/3 cup sugar
1/4 cup applesauce
1/2 teaspoon vanilla extract
1/4 cup coconut oil
1/2 cup all purpose flour
1/2 cup whole spelt flour (or oat or whole wheat flour)
1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons cinnamon
1/2 teaspoon salt

Preheat oven to 350 degrees and grease a muffin tin.

Place carrots in food processor and pulse a few times until they are grated. Add in the egg replacer, sugar, applesauce, vanilla and coconut oil and blend until combined.

In a separate bowl, sift & mix together together all dry ingredients (flours, baking powder, baking soda, cinnamon and salt).

Pour wet ingredients into the dry and gently fold together. Don’t over mix.

Scoop batter into the greased muffin tin – approx 1/3 cup batter per muffin.

Bake for 15-18 minutes, use a toothpick to check for doneness. Don’t over bake.
