incredible hulk smoothie.

hulkMy friend anna posted a recipe similar to this on instagram recently, and due to a large amount of avocados laying around my house, I knew I needed to try it out.  That was four days ago – so needless to say, I’m hooked. The addition of the avocado makes it so smooth and creamy. I love it.

I call it the incredible hulk smoothie, for obvious reasons – and it makes it fun when I serve it up to milo, who drinks it without even flinching.  Im sure there are alot of ways to mix this up – i think the addition of mango might even be nice!

Put in your blender:
1- 1 1/2 cups almond milk
1/4 of an avocado (more if you want a more creamier texture)
1 frozen banana1 small apple

Mix in your blender and serve immediately.

247. grilled tofu tacos.

In honor of labor day, we had some friends over in the afternoon for lunch and I made these grilled tacos with avocado cream and cabbage slaw, and grilled corn. They were excellent! We love to bbq, but never really know what to grill other than veggie burgers or pizza.  So this was great to add to the list. We made a little taco bar with all the ingredients and everyone mixed and matched to their liking. A fun way to say bid farwell to summer. Although, we may be making these again in our future!

44. avocado spinach pasta.


I love avocados. I love pasta. I love when a healthy dinner comes together in no time. Tonight was all of that! Original recipe can be found here. Her’s looks really delicious, but I veered off her recipe a bit – I used it as a starting point and made up my own version.

Heres what I did:
While my pasta noodles were boiling, I put these ingredients in my vitamix and blended it on high.

1 avocado
about a cup of spinach
1 carrot
handful of cherry tomatoes
1/2 onion
4 cloves garlic,
1 Tablespoon lemon juice
1/4 tspn paprika
1/4 tspn tumeric
1 Tablespoon dried basil
3 Tablespoon nutritional yeast
sea salt and pepper to taste

The result is a creamy delicious pasta sauce. When my pasta was done cooking, I put some noodles in a bowl, and put a spoonful or two and mixed it in. I added some chopped kalmata olives b/c I like the salty-ness with my avocados. I think some crushed pistachios would be awesome added in it! This was so easy and so delicious! It made a ton too!

13. tofu sandwiches.

I love a good sandwich. When I saw that photo above, I knew I needed to make something similar.
The recipe is from based on this one, but I made some modifications.

Ingredients:
Your favorite bread
Extra firm tofu
Avocado
Baby spinach
Hummus
Vegan ranch dressing
Non dairy milk
Breadcrumbs
Cornmeal
nutritional yeast
Salt & pepper

 Slice up your tofu and press it for at least two hours. I usually press mine overnight.

Preheat oven to 400°F.

Dip your tofu in the non dairy milk, then bread with crumbs, cornmeal, nutritional yeast, salt and pepper. Bake for 30 minutes (or until golden brown), flipping half way through.

To assemble, warm up your bread slices and spread them with a generous amount of hummus.  Place your bottom slice on a plate and lay the tofu, plenty of baby spinach and avocado slices on top. Top with vegan ranch dressing. Cover with the other slice and enjoy. Yum!
