It must be the time of year – but I’ve been making alot of smoothies lately. here is my take on a peanut butter and jelly smoothie!

1 cup almond milk
1 frozen banana
handful or so of frozen blueberries
1 tspn flax
1 T peanut butter
3 dates

Blend and enjoy…Delicious, right?!

 

VEW: pad thai with avocado and spicy greens.

I’ve been cooking like crazy from this book, and I plan to keep going at it, So I have a new category for this blog – hence the VEW seen above. Everything has been so well worth it! Tonight’s dinner was no exception. Pad thai. One of my favorite dishes to eat. However, when I make it at home, I dont see to have much luck. The noodles are always mooshy and dry. Tonight’s dinner was delicious. There are some things I will change for next time – but overall THERE WILL BE A NEXT TIME!
I used the savory tofu from the book, which it calls for, but I think next time I will just use plain tofu and fry it up. I made this savory tofu for the bi bim bop in the book (which is awesome by the way), and it was SO perfect for that, but this dish already had alot of flavors, so it came off kind of salty.

I especially loved the addition of kale to pad thai! I was kind of scared of veering off the traditional path – you didnt really even notice it was there, so you have all that added nutrition. As for the avocado….I didn’t really feel like this was a necessity. I will be leaving it off next time.

I changed the recipe up a bit, so I’m going to write out my version here.

I used
16 oz rice noodles
1 package tofu, pressed and fried up into cubes
a few handfuls of shredded kale
4 cloves garlic, minced (i would have done more if i had more!)
4 shallots, thinly sliced
4 scallions trimmed, white and green parts seperated
Peanut or vegetable oil ( i used olive oil b/c it was all i had on hand)

Sauce:
1/3 cup brown sugar
juice from 2 limes
3 T soy sauce
2 T ketchup
1 tspn white miso
2 tpsn tamarind concentrate
1/2 tspn coriander

Toppings:
Cilantro
shredded carrots
ground peanuts
lime wedges for squeezing at the end
sprouts ( i didnt have any but they would be good)

Here is what really worked for this recipe: Fill a large pot with about 6 inches of hot/warm water and put the noodles in there for about 20 minutes (!!!!)

When you are making the pad thai plates, you will be doing one serving at a time (this recipe makes about four servings) This helps from everything getting really mooshy. Everything cooks up really fast though.

Heat a wok or large pan to medium high heat with a little oil. When the pan is nice and hot….Throw in 1/4 of the shallots, white parts of the green onions and the garlic. Let cook for about two minutes, then add 1/4 of the noodles, tofu (its already fried, remember?!), green onion and carrots and stir around for another minute or two. Top with crushed peanuts, cilantro and peanuts and serve with a lime wedge.

do this for the other three servings, each one at a time. Its good stuff I tell ya!

mickey cakes.

I made these mickey cakes as a surprise for my best friend who will be running the disney marathon next week! She happens to really love mickey, (make sure to click on her link above!) have a birthday this month, and told me yesterday  in a text ” i really love cake.” So here you go!

I also have two toddlers running around my house, so I thought these would impress them as well 🙂

This actually worked out great because I had some leftover frosting from a cake I made recently. It called for more than double the amount of frosting than the actual cake needed. I hate when that happens! The frosting is cream cheese frosting – SO its not necessarily the color of mickey – BUT I happen to have a husband who always buys trader joe-joes, then eats about four of them, leaving an entire box just sitting there.  Soooo, trader joe-joes to the rescue!

I made my usual vegan chocolate cupcake recipe. I just got red and white polka dot cupcake liners from the christmas clearance section at target. I knew these would come in handy! I melted chocolate to dip the “ears” into, for added deliciousness. I scraped the cream out of the joe joes and put them in the vitamix to grind into find crumbs. I frosted each cupcake, dipped it in the cookie crumbs, then stuck the two chocolate covered cookie ears into the cake.

I finally got around to making some cafe curtains for my little kitchen window. I used milo’s old crib sheet for the fabric, so that makes me happy that I found a good way to repurpose something so special. I used this tutorial as a rough guide, and the rings and rod are from target. This really didn’t take long to accomplish at all, especially because the fabric has little crosses on it, so I was able to use those as a guide when I hemmed them.  Curtains sure are hard to photograph!

I made milo an owl hat. He chose the colors – he insisted it be blue.

Someone on facebook posted this crochet pattern and said its pretty easy. So i took a stab at it – and turns out it is.
However, I started making milo the toddler/preschool size and got almost done while he was napping only to find out that when he woke up that its way too small. So i started over using the child size….And i had to add some rows and kind of make some stuff up while I went along because it was still coming up on the smaller size. So i did some winging – but that shows me that I’m starting to get comfortable enough with crocheting to be able to so.

This was alot of fun to make, and you can easily whip this up in a few hours. Like I said, i crocheted most of the hat while milo was taking a nap! I didn’t do the braided strings at the end because I thought it looked girly, but after looking at the finished product, maybe I will go back and do something like that?
