305. carrot cake smoothies.

Happy Halloween! I wish i had something more festive to share today….but hey! at least its orange…

This was a variation on something I saw on pinterest and it said instead of eating a piece of carrot cake for dessert – try this…It definitely wasn’t as good as cake, but it was pretty healthy and kind of reminiscent of carrot cake so at least theres that….

I put in the vitamix:
1 large carrot,
10 oz almond milk
squirt of honey
dash of cinnamon
dash of nutmeg
Handful frozen pineapple
Half a frozen banana
1 tspn flax

Blend and enjoy

208. bell pepper soup.

We hosted 12 people this week and grilled pizzas, so we had lots of vegetables left over, particularly bell peppers. They were already sauteed, so I wasn’t too excited about throwing them into a salad. Instead, I thought to use my handy vitamix and make soup for dinner!

This is what I came up with:
About a cup or so sliced bell peppers ( i had yellow, red and green)
1/4 cup soymilk
1/2 cup vegetable broth
pinch of thyme
salt and pepper to taste
1/2 onion
2 cloves garlic

Sautee the onion until starting to get translucent and then add the garlic. Cook for about a minute or two, and then add all items to the vitamix. You can continue to blend until warm, or remove and add to a pot to heat up.

159. pineapple and basil smoothie.

This super delicious smoothie was inspired by the house-made sorbet whole foods has sometimes at the ice cream bar….That and I had four rings of pineapple left, and one sad sprig of basil. I threw that in the vitamix along with a kiwi, handful of grapes, three big pieces of kale, ice cubes and a little water….SUCCESS!

144. Strawberry banana peach smoothie

Another busy day!

Needed time to fuel with a smoothie.

Almond milk, frozen strawberries, frozen peaches and banana.
Added some hemp seeds, flax and protein powder.

131. strawberry, kiwi, grape and peach smoothie.

Since we are moving next week I have been trying to use up the food we have in the house. This smoothie is a pure result of that task.

About 8-10 strawberries
2 overripe kiwis
1 cup green grapes
Half of a peach soy yogurt
1/4 cup almond milk
ice cubes.

This hit the spot.

109. pineapple, banana, apple & kale smoothie.

Milo even drank this green smoothie…and wanted more!

65. pineapple, banana, peach, kiwi and kale smoothie.


Pineapples were 98 cents at stanleys yesterday and I had a kiwi that was starting to go bad, so those were the inspiration for today’s smoothie. This weekend is still catching up with me – so this is the best I can do for today….

1/2 frozen banana
about 6 frozen peach slices
1 kiwi, peeled
some pineapple
two big kale leaves
1/2 cup almond milk
1/4 cup water
ice

blend and enjoy! it makes a pretty green color, don’t you think?!

61. oatmeal breakfast smoothie.

Tonight I’m leaving on a plane to head to NYC. So this week has been pretty food heavy, but I hope to have some crafty things in store next week – Today I give you a smoothie….one of my favorites. It reminds me of the oatmeal shakes you get at Irazu.  Not dead on, but similar for sure. Its a thinner smoothie than you might be used to, but I love the sweetness from the dates and cinnamon. Reminds me of horchata. I’m sure you can definitely play with this basic formula and mix and match and come up with all kinds of delicious combinations. I know I plan to…. But for now, this is the basic go-to recipe.

1/4 cup rolled oats
1/4 cup water
1/2 cup almond milk
1/3 cup yogurt (I used soy)
1/2 teaspoon ground cinnamon, plus more for dusting
1 apple, cored and roughly chopped
1/4 teaspoon vanilla extract
2 dried dates
Ice cubes

* Try adding a frozen banana or subbing banana for apple. both options = YUM!

52. birthday cake shake

When its your birthday, its only right you have a birthday cake shake, right? Its even kind of healthy…that is until you have it along side a vegan panczki! oops……

In a blender mix:
1 cup vanilla almond milk
1 frozen banana
3 T yellow cake mix (make sure its vegan)
Ice cubes
Top with Sprinkles!

50. apple, orange, banana and kale smoothie.


After eating alot of delicious vegan food last night (including two cupcakes!), I woke up in need of something healthy. So I started my day with this shake and it did the job!

1/2 cup almond milk
Hand full of ice
1/2 frozen banana
2 clementines
1/2 apple
hand full of kale
1 Tbsp protein powder
1/2 tsp flax
